Directions:
Rice replacement dish: Ring 1 ½ cups of water and ¼ tsp salt to a boil in a medium pot. Add 1 cup amaranth,
reduce heat and simmer, covered, until liquid is absorbed, about 20 minutes.
(Makes 4 servings.)
Hot cereal/Porridge: Bring 2 ½ cups of water and ½ tsp salt to a boil in a medium pot.
Add 1 cup amaranth reduce heat and simmer, cover for 25 minutes.
(Makes 4 servings.)
Can also be put in soups and added to certain salads and can generally be used as you would quinoa or as a porridge.
